  • 1 cup packed light brown sugar
  • 1/2 cup unsalted butter, cubed
  • 1/2 cup heavy cream, room temperature
  • 1/4 cup corn syrup
  • Pinch of sea salt

Instructions

  1. Simmer 1 cup apple cider in a saucepan until reduced by half.
  2. Stir in brown sugar, corn syrup, and butter until melted.
  3. Whisk in heavy cream slowly until smooth.
  4. Boil without stirring until the mixture reaches 240°F on a candy thermometer.
  5. Pour immediately into a parchment-lined 8×8 inch pan.
  6. Cool for 4 hours at room temperature.
  7. Cut into small squares and wrap in wax paper.
