  • 1.5 lbs boneless, skinless chicken thighs
  • 1/2 cup balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh herbs (rosemary or thyme), chopped

Instructions

  1. In a large bowl, mix balsamic vinegar, olive oil, garlic, honey, salt, pepper, and herbs. Add chicken thighs and coat evenly. Cover and refrigerate for at least 30 minutes.
  2. Preheat the grill to medium-high heat (400°F/200°C) and lightly oil the grates.
  3. Remove marinated chicken from the fridge and grill on each side for 6-8 minutes until the internal temperature reaches 165°F (75°C).
  4. Brush leftover marinade onto the chicken during the last few minutes of grilling for added flavor.
  5. Let the chicken rest for 5 minutes before serving. Drizzle any remaining marinade over the top.
