  • 1.5 lbs boneless skinless chicken thighs
  • 16 oz chunky salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • 3 cloves garlic, minced
  • 1 lime, juiced
  • Fresh cilantro for garnish

Instructions

  1. Brown chicken in a skillet over medium-high heat for 3 minutes per side.
  2. Place drained black beans and corn at the bottom of the slow cooker.
  3. Add the browned chicken on top of the vegetables.
  4. Mix cumin, chili powder, and minced garlic, then sprinkle over the chicken.
  5. Pour the chunky salsa over the entire mixture until covered.
  6. Cover and cook on Low for 6-8 hours or High for 3-4 hours.
  7. Shred the chicken using two forks directly in the pot.
  8. Stir in fresh lime juice and garnish with cilantro before serving.
