A creamy, savory zucchini quiche featuring a flaky buttery crust and rich Gruyère cheese. Perfect for summer brunches.

Ingredients

  • 1 chilled 9-inch pie crust
  • 2 medium zucchinis, sliced
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 1 tbsp butter for sautéing

Instructions

  1. Preheat oven to 375°F and fit pie crust into a pan.
  2. Sauté sliced zucchini in butter until golden and tender.
  3. Whisk together eggs, heavy cream, thyme, salt, and pepper.
  4. Layer sautéed zucchini and grated Gruyère in the bottom of the crust.
  5. Pour the egg mixture over the filling.
  6. Bake for 35-40 minutes until the center is set and golden brown.
  7. Rest for 15 minutes before slicing.
