  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
  2. Whisk together flour, cinnamon, baking soda, and salt in a large bowl.
  3. In a separate bowl, beat the brown sugar and melted butter together.
  4. Stir in the eggs, applesauce, and vanilla extract until smooth.
  5. Gently fold the dry ingredients into the wet ingredients using a spatula until just combined.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
