  • 34 lb Beef Chuck Roast
  • 1/2 cup Soy Sauce
  • 1/3 cup Brown Sugar
  • 2 tbsp Gochujang (Korean chili paste)
  • 2 tbsp Fresh Ginger, grated
  • 4 cloves Garlic, minced
  • 1 tbsp Sesame Oil
  • 1 tbsp Rice Vinegar
  • 2 tbsp Vegetable Oil for searing

Instructions

  1. Pat the beef roast dry with paper towels and season lightly with pepper.
  2. Heat vegetable oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, then remove from pan.
  3. In a bowl, whisk together soy sauce, brown sugar, gochujang, garlic, ginger, sesame oil, and rice vinegar.
  4. Place the seared roast into a slow cooker and pour the glaze over the top.
  5. Cover and cook on Low for 8 hours or High for 4-5 hours until the meat is tender.
  6. Remove the roast and set it aside to rest. Pour the cooking liquid from the slow cooker into a saucepan.
  7. Simmer the sauce over medium heat for 10-15 minutes until thickened into a glaze.
  8. Slice the roast across the grain and pour the reduced glaze over the meat before serving.
