1 lb large shrimp, peeled and deveined
2 cups fresh pineapple chunks
1 red bell pepper, sliced
1 green bell pepper, sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup soy sauce
1/4 cup pineapple juice
1 tablespoon cornstarch
2 tablespoons sesame oil
Green onions for garnish

Instructions
Whisk together soy sauce, pineapple juice, and cornstarch in a small bowl until smooth.
Heat 1 tablespoon of sesame oil over medium-high heat. Sear shrimp for 1-2 minutes per side until pink, then remove and set aside.
In the same pan, add pineapple chunks and sear until browned on the edges.
Add bell peppers and sauté for 3 minutes until crisp-tender.
Stir in minced garlic and ginger, cooking for 30 seconds until fragrant.
Pour the sauce mixture over the vegetables and fruit, stirring until the sauce thickens and becomes glossy.
Return the cooked shrimp to the pan, toss to coat for 1 minute, and remove from heat.
