  • 1 cup pumpkin puree (canned or homemade)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter

Instructions

  1. Preheat oven to 325°F (160°C) and grease a springform pan.
  2. In a mixing bowl, combine graham cracker crumbs with melted butter; press into the bottom of the springform pan.
  3. In another bowl, beat cream cheese until smooth; gradually add granulated and brown sugars until combined.
  4. Mix in pumpkin puree, cinnamon, nutmeg, vanilla extract, and eggs one at a time until smooth.
  5. Pour filling over the crust and bake for 50-60 minutes or until set but slightly jiggly in the center.
  6. Let cool at room temperature for an hour before refrigerating for at least four hours or overnight.
