  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ⅓ cup vegetable oil
  • 1 cup white icing (store-bought or homemade)
  • Candy eyes for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, sugar, and salt.
  3. In another bowl, mix eggs, milk, and vegetable oil until smooth. Combine with dry ingredients until just mixed.
  4. Fill muffin cups two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean. Cool in the pan for five minutes before transferring to a wire rack.
  5. Once cooled, drizzle white icing on top in a crisscross pattern and add candy eyes.
