Ingredients

  • 1 small butternut squash, peeled and cubed
  • 1 small sugar pumpkin, peeled and cubed
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 cups vegetable broth
  • 1 tbsp maple syrup
  • Salt and black pepper to taste
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Toss squash and pumpkin with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until edges are caramelized.
  2. While roasting, sauté diced onion in a large pot over medium heat until translucent.
  3. Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.
  4. Add the roasted vegetables to the pot and stir to combine with aromatics.
  5. Pour in vegetable broth and bring to a boil, then simmer for 10-15 minutes on low heat.
  6. Use an immersion blender to puree the soup until completely smooth.
  7. Stir in maple syrup and lemon juice. Season with additional salt and pepper to taste.
