  • 6 tbsp melted unsalted butter
  • 2 tbsp cinnamon
  • 16 oz softened cream cheese
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice

Instructions

  1. Preheat oven to 325°F.
  2. Mix graham cracker crumbs, 1 tbsp cinnamon, and melted butter; press into a 9-inch springform pan.
  3. Beat cream cheese and brown sugar until smooth.
  4. Mix in pumpkin puree, vanilla, pumpkin pie spice, and remaining cinnamon.
  5. Pour filling over crust and smooth top.
  6. Bake for 45-50 minutes until edges are set.
  7. Cool to room temperature, then refrigerate for 6 hours.
