  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time. Mix in pumpkin puree, sour cream, vanilla extract, and pumpkin spice until combined.
  4. Pour the filling over the crust and bake for 50-60 minutes until set around the edges but slightly jiggly in the center.
  5. Cool in the oven with the door ajar for an hour before refrigerating for at least four hours or overnight.
