Ingredients

  • Crushed Graham Crackers (2 cups)
  • Unsalted Butter (1/2 cup, melted)
  • Cream Cheese, softened (16 oz)
  • Sour Cream (1 cup)
  • Powdered Sugar (1/2 cup)
  • Whole Eggs (4)
  • Vanilla Extract (2 tsp)
  • Lemon Zest (1 tbsp)
  • Fresh Mint Leaves (1/4 cup, finely chopped)
  • Pomegranate Seeds (1 cup, fresh)

Instructions

  1. Preheat oven to 325°F (160°C) and line springform pans with parchment.
  2. Mix crushed crackers with melted butter; press into pan bottoms.
  3. Blend cream cheese, sour cream, sugar, eggs, vanilla, lemon zest, and mint until smooth.
  4. Top crusts with batter, tap to release air pockets, bake 25 minutes.
  5. Cool, chill 2 hours, then top with pomegranate seeds, mint, and simple syrup.
  6. Serve immediately or chill loosely covered.
