  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/3 cup peach preserves
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons ground cinnamon
  • 2 tablespoons granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and 1/4 cup granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Fold in the peach preserves until just distributed.
  5. In a separate bowl, whisk together flour, baking soda, and salt, then slowly stir into the wet ingredients until just combined.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Mix 2 tablespoons of cinnamon and 2 tablespoons of sugar in a small bowl.
  8. Scoop tablespoon-sized balls of dough, roll them in the cinnamon-sugar mixture, and place on the baking sheet.
  9. Bake for 10-12 minutes until edges are lightly golden.
  10. Let cool on the pan for 5 minutes before transferring to a wire rack.
