  • 16 oz Tri-color Rotini pasta
  • 1 cup fresh strawberries, halved
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 1/3 cup red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 2 tbsp honey
  • Salt and black pepper to taste

Instructions

  1. Boil salted water and cook rotini until al dente.
  2. Drain and rinse pasta with cold water.
  3. Whisk together red wine vinegar, honey, olive oil, salt, and pepper.
  4. In a large bowl, combine chilled pasta and feta cheese.
  5. Gently fold in strawberries and blueberries.
  6. Pour dressing over the salad and toss lightly to coat.
  7. Chill for 30 minutes before serving.
