  • 2 cups vegetable broth
  • 1 can (15oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 tbsp fresh lime juice
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat; sauté onion and garlic until translucent.
  2. Add quinoa to the pan and toast for 2 minutes until fragrant.
  3. Stir in taco seasoning and pour in vegetable broth.
  4. Bring to a boil, then cover and simmer on low for 15 minutes.
