  • 1 ½ tsp baking powder
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 2 tsp vanilla extract
  • 3 cups powdered sugar
  • 1 cup unsalted butter, softened
  • Green food coloring (to desired shade)

Instructions

  1. Preheat oven to 350°F (175°C). Line a cupcake tray with paper liners.
  2. In a mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one by one, mixing well after each addition, then stir in vanilla.
  3. In another bowl, whisk flour and baking powder together. Gradually add dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
  4. Fill each cupcake liner two-thirds full with batter. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow cooling on wire racks.
  5. For frosting, beat together softened butter and powdered sugar until smooth. Add green food coloring gradually until desired color is achieved. Pipe frosting onto cooled cupcakes using a star tip.
