1/2 cup powdered sugar
2 cups all-purpose flour
1 teaspoon peppermint extract
1/2 cup mini semi-sweet chocolate chips
1/4 teaspoon salt
1/2 cup powdered sugar for rolling
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream together softened butter and 1/2 cup powdered sugar until light and fluffy.
Stir in the peppermint extract and salt until well combined.
Slowly fold in the flour until just combined; do not overmix.
Fold in the mini chocolate chips gently.
Chill the dough in the refrigerator for 30 minutes.
Roll the dough into 1-inch balls and place them on the baking sheet.
Bake for 12-15 minutes; cookies should remain pale.
Roll warm cookies in powdered sugar immediately after removing from the oven.
Allow to cool for 5 minutes, then roll them in powdered sugar a second time.
