  • 4 tbsp melted butter
  • 2 cups Granny Smith apples, finely diced
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp cornstarch
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup salted caramel sauce

Instructions

  1. Mix Graham cracker crumbs and melted butter; press into mini muffin tins.
  2. Sauté diced apples with brown sugar, cinnamon, and cornstarch until thickened.
  3. Beat softened cream cheese and granulated sugar until smooth.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. Place a small amount of apple mixture into each crust, then top with cheesecake batter.
  6. Bake at 325°F for 15-20 minutes until edges are set.
  7. Cool in the pan, then refrigerate for at least 2 hours.
  8. Drizzle with salted caramel and top with an apple piece before serving.
