  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup heavy cream
  • 2 cups powdered sugar, sifted

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in butterscotch sauce and vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add this mixture to the wet ingredients, alternating with milk. Mix until just combined.
  4. Fill cupcake liners about two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  5. Allow cupcakes to cool in the pan for five minutes before transferring them to a wire rack to cool completely.
  6. For the frosting, whip heavy cream until soft peaks form. Gradually add powdered sugar while continuing to whip until stiff peaks form. Frost cooled cupcakes generously.
