  • 810 lbs bone-in ham
  • 1 cup cranberry sauce
  • 1/2 cup Dijon mustard
  • 1/2 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 325°F (165°C) and prepare a roasting pan with a rack.
  2. Remove packaging from the ham, pat dry, and score the surface in a diamond pattern.
  3. In a bowl, mix cranberry sauce, Dijon mustard, brown sugar, apple cider vinegar, and ground cinnamon until well combined. Reserve some for basting.
  4. Place ham on the rack and brush half of the glaze over it. Reserve remaining glaze for later basting.
  5. Roast covered loosely with foil for approximately 1 hour per pound, basting every 30 minutes until the internal temperature reaches 140°F (60°C).
  6. Let rest for 15 minutes before slicing and serve with remaining glaze.
