  • 1 cup fresh ricotta cheese
  • 2 cups baby spinach leaves

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Slice eggplants lengthwise into 1/4-inch strips. Sprinkle with salt and let sit for 20 minutes. Rinse and pat dry.
