Instructions

  1. Warm milk to 110°F (43°C). Mix with yeast and sugar; let sit until frothy (5-10 minutes).
  2. In a large bowl, whisk together flour, cinnamon, and salt.
  3. Beat eggs in another bowl. Combine frothy yeast mixture with eggs; add to dry ingredients and mix until combined.
  4. Knead dough on a floured surface for 8-10 minutes until smooth.
  5. Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled (about one hour).
  6. Punch down dough gently; fold in soaked dried fruit. Shape into a loaf and place in a greased pan; let rise again for 30 minutes.
