  • 2 cups roasted butternut squash (about 1 medium squash)
  • 2 tbsp extra virgin olive oil
  • 2 cloves fresh garlic, minced
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cumin
  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Halve the butternut squash, remove seeds, and place cut-side up on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for 30-35 minutes until tender.
  2. While roasting, heat a skillet over medium heat. Add olive oil and sauté minced garlic until fragrant, about 1-2 minutes. Stir in cinnamon and cumin.
  3. Once the squash has cooled slightly, scoop out the flesh into a food processor. Add the sautéed garlic mixture, Greek yogurt, lemon juice, salt, and pepper. Blend until smooth.
  4. Taste and adjust seasoning if necessary.
  5. Serve in a bowl with a drizzle of olive oil and garnish with fresh herbs.
