Black Cocoa Mummy Macarons are an irresistibly spooky treat, perfect for Halloween or any festive occasion.   • 1 cup almond flour (100g)
  • 1 3/4 cups powdered sugar (220g)
  • 1/2 cup black cocoa powder (50g)
  • 3 large egg whites (about 90g)
  • 1/4 cup granulated sugar (50g)
  • 1/2 cup heavy cream (120ml) for filling
  • 4 oz dark chocolate (113g) for filling

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift together almond flour, powdered sugar, and black cocoa powder in one bowl. In another bowl, whip egg whites until foamy; gradually add granulated sugar and whip until stiff peaks form.
  3. Gently fold the dry mixture into the egg whites in three additions until well combined.
  4. Transfer batter to a piping bag and pipe small circles onto prepared sheets. Tap sheets to release air bubbles.
  5. Let macarons rest for 30 minutes, then bake for 15-20 minutes until easily lifted from parchment.
  6. Prepare ganache by heating heavy cream until bubbling; pour over chopped dark chocolate, stir until smooth.
  7. Once cooled completely, sandwich two macaron shells with ganache.
