  • 2 lbs beef chuck roast
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 28 oz canned whole peeled tomatoes
  • 1 cup red wine (dry)
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to 'Sauté' mode. Heat olive oil and sauté onions, carrots, and celery until softened (about 5 minutes).
  2. Add the beef chuck roast, seasoning with salt and pepper. Sear each side for 3-4 minutes until browned.
  3. Pour in crushed tomatoes, red wine, and oregano; stir well to combine.
  4. Secure the lid and set to 'Pressure Cook' on high for 45 minutes.
  5. Once done, allow a natural pressure release for 10 minutes before quick releasing any remaining pressure.
  6. Shred the beef with two forks directly in the pot and mix everything well before serving over pasta or polenta.
