  • 2 lbs chuck roast
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 1 cup low-sodium beef broth
  • ½ cup red wine
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to 'Sauté' mode and heat olive oil. Season the chuck roast with salt and pepper; sear on all sides until browned. Remove and set aside.
  2. In the same pot, add onion, carrots, celery, and garlic. Sauté for about 5 minutes until softened.
  3. Deglaze the pot with red wine, scraping up any browned bits. Cook for 2 minutes to reduce slightly.
  4. Return the beef to the pot along with crushed tomatoes, beef broth, oregano, and stir well.
  5. Seal the lid and cook on 'Manual' high pressure for 45 minutes. Allow a natural release for 10 minutes before manually releasing any remaining pressure.
  6. Shred the beef with two forks and mix back into the sauce. Serve over pasta or polenta.
