  • 1 cup buttermilk

  • 2 tsp vanilla extract
  • 1 cup water
  • 1 cup sweetened condensed milk
  • 1 cup coconut flakes (sweetened or unsweetened)
  • 1 cup chopped pecans (toasted)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and dust three round baking pans with cocoa powder.
  2. In a bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk eggs, melted butter, buttermilk, vanilla extract, and water until blended.
  4. Combine wet and dry ingredients until just mixed; do not over-mix.
  5. Pour batter into pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Cool cakes on wire racks. For frosting, heat condensed milk, coconut flakes, and pecans in a saucepan until thickened.
  7. Layer cooled cakes with frosting and top generously.
