  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix vegetable oil, sugar, buttermilk, eggs, food coloring, and vanilla until smooth.
  4. Combine wet ingredients with dry ingredients; stir gently until just mixed.
  5. Fill cupcake liners with batter and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Cool cupcakes in the pan for five minutes before transferring to a wire rack to cool completely.
  7. Frost cooled cupcakes with cream cheese frosting.
