  • 4 salmon fillets (6 oz each)
  • 2 tablespoons Cajun seasoning
  • 1 cup long grain white rice, rinsed
  • 2 cups chicken broth
  • 3 tablespoons honey
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Pat salmon fillets dry and coat with Cajun seasoning.
  2. Heat butter in a large skillet over medium-high heat; sear salmon for 3-4 minutes per side until browned, then remove from pan.
  3. In the same pan, sauté minced garlic for 1 minute.
  4. Add dry rice and toast for 2 minutes, stirring constantly.
  5. Pour in chicken broth, bring to a boil, then cover and simmer on low for 15-18 minutes.
  6. Whisk honey and lemon juice together; stir into the cooked rice.
  7. Place salmon fillets on top of the rice, cover, and steam for 2-3 minutes until finished.
  8. Garnish with fresh parsley and serve hot.
