- 4 salmon fillets (6 oz each)
- 2 tablespoons Cajun seasoning
- 1 cup long grain white rice, rinsed
- 2 cups chicken broth
- 3 tablespoons honey
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- Fresh parsley for garnish
- Pat salmon fillets dry and coat with Cajun seasoning.
- Heat butter in a large skillet over medium-high heat; sear salmon for 3-4 minutes per side until browned, then remove from pan.
- In the same pan, sauté minced garlic for 1 minute.
- Add dry rice and toast for 2 minutes, stirring constantly.
- Pour in chicken broth, bring to a boil, then cover and simmer on low for 15-18 minutes.
- Whisk honey and lemon juice together; stir into the cooked rice.
- Place salmon fillets on top of the rice, cover, and steam for 2-3 minutes until finished.
- Garnish with fresh parsley and serve hot.
