  • 1/2 cup honey
  • 2 large eggs
  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350F and grease a loaf pan.
  2. Grate zucchini finely.
  3. Whisk yogurt, honey, and eggs until smooth.
  4. Sift in flour, cinnamon, baking soda, and salt.
  5. Fold in grated zucchini until just combined.
  6. Pour into pan and bake for 50-60 minutes.
  7. Cool in pan for 10 minutes, then transfer to wire rack.
