  • 6 large fresh peaches, sliced
  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1 tsp salt
  • 6 tbsp ice water
  • 1/2 cup granulated sugar
  • 3 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 egg, beaten
  • 1/4 cup vanilla sugar

Instructions

  1. Combine flour and salt; cut in chilled butter until pea-sized crumbs form.
  2. Add ice water gradually until dough forms; chill for 1 hour.
  3. Toss sliced peaches with sugar, cornstarch, and cinnamon.
  4. Roll out half the dough to line a 9-inch pie plate.
  5. Fill the crust with the peach mixture.
  6. Roll out remaining dough and cut into strips to create a lattice top.
  7. Brush lattice with egg wash and sprinkle with vanilla sugar.
  8. Bake at 400F for 20 minutes, then 350F for 30 minutes until golden.
