  • 2 lbs boneless skinless chicken thighs
  • 1 can (14 oz) full-fat coconut milk
  • 1.5 tbsp ground turmeric
  • 2 golden bell peppers, sliced
  • 2 inch piece fresh ginger, minced
  • 4 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Place chicken thighs in the bottom of the crockpot and season with salt and pepper.
  2. Whisk coconut milk, turmeric, ginger, and garlic together in a bowl.
  3. Pour the coconut mixture over the chicken.
  4. Layer sliced golden peppers on top of the chicken.
  5. Cook on Low for 6-7 hours or High for 3-4 hours.
  6. Stir gently before serving.
