A luxurious twist on shrimp scampi, combining succulent garlic shrimp and linguine topped with melted Parmesan cheese and baked to perfection.

  • 1 lb large shrimp, peeled and deveined
  • 12 oz linguine pasta
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes
  • Fresh parsley for garnish
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400F (200C).
  2. Cook linguine in salted water until 2 minutes before al dente, then drain.
  3. Sauté shrimp in butter over medium-high heat until just pink; remove from pan.
  4. Sauté minced garlic and red pepper flakes in the same pan for 1 minute.
  5. Stir in lemon juice and 1/4 cup pasta water to create a sauce.
  6. Toss cooked pasta and shrimp into the sauce until well coated.
  7. Transfer to a baking dish and top with Parmesan cheese.
  8. Broil for 3-5 minutes until the cheese is bubbly and golden.
