  • 1/2 cup fresh key lime juice
  • Zest of 2 limes
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press into the bottom of the prepared dish.
  3. In another bowl, beat cream cheese and sour cream until smooth. Gradually add remaining sugar, then mix in key lime juice and lime zest.
  4. Add eggs one at a time, blending until smooth without overmixing.
  5. Pour filling over crust and bake for 25-30 minutes until slightly jiggly in center.
  6. Cool at room temperature for an hour, then refrigerate for at least four hours before slicing.
