  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 9 no-boil lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups shredded part-skim mozzarella cheese
  • 1 cup fresh basil leaves
  • 2 ripe Roma tomatoes (or 1 cup cherry tomatoes)
  • 2 cloves garlic (minced)
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. 1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper and bake for 25-30 minutes until fully cooked. Shred the chicken and set aside.
  2. 2. In a saucepan, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add diced tomatoes, salt, pepper, and half of the basil. Simmer for 10 minutes.
  3. 3. In a bowl, mix ricotta cheese, half of the mozzarella, Parmesan, remaining basil, salt, and pepper until smooth.
  4. 4. Spread a thin layer of tomato sauce in a baking dish. Layer with noodles, half of the shredded chicken, and half of the cheese mixture. Repeat layers ending with noodles topped with remaining sauce and mozzarella.
  5. 5. Cover with foil and bake for 30 minutes; remove foil for the last 10 minutes to allow cheese to brown.
  6. 6. Let cool for 10 minutes before slicing. Serve garnished with additional basil if desired.
