  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 ripe avocados, diced
  • 1 cup bell peppers, sliced
  • 1 cup carrots, shredded
  • 4 rice wraps (8-inch)
  • 1/4 cup Thai peanut sauce (dairy-free)
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, lightly mash the drained chickpeas. Mix in diced avocado, sliced bell peppers, shredded carrots, and season with a pinch of salt.
  2. In another bowl, whisk together 1/4 cup peanut butter, 2 tbsp coconut milk, juice of 1 lime, 1 tbsp soy sauce or tamari, and sriracha to taste.
  3. Soak each rice wrap in warm water for about 10 seconds until soft. Place on a clean surface.
  4. Spoon the chickpea filling into the center of each wrap and drizzle with peanut sauce.
  5. Fold in the sides of the wrap and roll tightly from the bottom up. Cut each wrap in half diagonally and garnish with cilantro.
