  • 4 medium pears
  • 1 cup ricotta cheese
  • 2 tbsp honey
  • 1/2 cup toasted pistachios (plus 1/4 cup reserved for topping)
  • 1 tbsp lemon zest
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper
  • 2 tbsp fresh thyme leaves
  • 1 tbsp olive oil
  • 1 tbsp balsamic reduction (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Core pears, fill with ricotta mix.
  3. Warm reserved pistachios then hold.
  4. Bake pears for 20‑25 min.
  5. Drizzle with olive oil and top with pistachios.
  6. Spoon balsamic reduction if desired.
  7. Serve warm.
