A light and zesty twist on the classic Thai favorite, using spiralized zucchini for a low-carb, nutrient-dense dinner.

Ingredients

  • 2 medium zucchinis, spiralized
  • 2 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 shallot, minced
  • 1/2 lb shrimp or tofu
  • 1/4 cup roasted peanuts
  • 1/2 cup bean sprouts
  • 2 scallions, sliced

Instructions

  1. Spiralize zucchinis and pat dry with paper towels.
  2. Whisk tamarind paste, fish sauce, and palm sugar in a bowl.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Sauté garlic and shallots until fragrant.
  5. Add shrimp or tofu and cook until golden brown.
  6. Add zucchini noodles and pour sauce over them; toss for 2-3 minutes.
  7. Stir in bean sprouts and scallions, then remove from heat immediately.
  8. Garnish with roasted peanuts and serve.
