  • 4 bone‑in pork chops
  • 1 cup fresh pineapple chunks
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil
  • 1/4 cup sliced scallions
  • Salt & pepper

Instructions

  1. Season pork chops with salt and pepper.
  2. Whisk pineapple, soy sauce, honey, garlic, ginger, and rice vinegar in a bowl.
  3. Heat oil in skillet, sear chops 3 minutes each side.
  4. Reduce heat, pour pineapple mixture over chops, bring to a simmer.
  5. Cover, cook 8–10 minutes until internal temperature 145°F.
  6. Remove from heat, garnish with scallions.
  7. Serve over rice or quinoa.
