  • 1 lb lean ground beef (80% lean)
  • 2 medium zucchini, sliced
  • 2 medium sweet potatoes, diced (about 2 cups)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Peel and dice the sweet potatoes; chop the zucchini; dice the onion; and mince the garlic.
  2. Heat olive oil in a large skillet over medium heat until shimmering.
  3. Sauté the onion for 3 minutes until translucent, then add garlic and cook for another minute.
  4. Add ground beef to the skillet; break it apart with a spatula and cook until browned (about 5 minutes). Drain excess fat if necessary.
  5. Stir in diced sweet potatoes along with salt and pepper. Cover and cook for about 8 minutes until tender.
  6. Add sliced zucchini and cook uncovered for another 5 minutes until crisp-tender.
