  • 2 cups long-grain white rice, rinsed
  • 1 lb boneless skinless chicken breast, cubed
  • 1/4 cup soy sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups chicken broth
  • 1 cup frozen peas and carrots mixture
  • 2 scallions, sliced

Instructions

  1. Place rice, chicken, soy sauce, sesame oil, garlic, and ginger in the slow cooker.
  2. Add chicken broth and stir gently to combine.
  3. Cover and cook on LOW for 6 to 7 hours.
  4. Stir in frozen peas and carrots 30 minutes before the end of cooking.
