1.5 lbs boneless skinless chicken breasts
1 cup chicken broth
1/2 cup sun-dried tomatoes, chopped (with oil from jar)
3 cloves garlic, minced
1 tsp Italian seasoning
1/2 cup heavy cream
1/2 cup grated parmesan cheese
2 cups fresh spinach
Salt and pepper to taste
1 tbsp olive oil
Instructions
Sear the chicken breasts in olive oil over medium-high heat until browned on both sides.
Place seared chicken into the crockpot and add minced garlic and Italian seasoning.
Pour in chicken broth and the reserved oil from the sun-dried tomato jar.
Cook on low for 6-7 hours or high for 3-4 hours until tender.
Remove chicken, shred with two forks, and return to the pot.
Stir in heavy cream and parmesan cheese until melted and smooth.
Fold in fresh spinach and chopped sun-dried tomatoes; stir until spinach is wilted.
