  • 1.5 lbs boneless skinless chicken breasts
  • 1/3 cup honey
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch mixed with 1 tbsp water (for thickening)

Instructions

  1. Pat chicken breasts dry and place them in the bottom of the slow cooker.
  2. In a bowl, whisk together honey, lemon juice, minced garlic, soy sauce, olive oil, and black pepper.
  3. Pour the mixture over the chicken, ensuring all pieces are well-coated.
  4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken reaches 165°F.
  5. Remove chicken from the pot and set aside on a platter.
  6. Whisk the cornstarch slurry into the remaining liquid in the pot and simmer on high for 2-3 minutes until thickened.
  7. Pour the thickened glaze over the chicken and serve immediately.
