1.5 lbs boneless skinless chicken breasts
1/3 cup honey
1/4 cup fresh lemon juice
3 cloves garlic, minced
2 tbsp soy sauce
1 tbsp olive oil
1/2 tsp black pepper
1 tbsp cornstarch mixed with 1 tbsp water (for thickening)
Instructions
Pat chicken breasts dry and place them in the bottom of the slow cooker.
In a bowl, whisk together honey, lemon juice, minced garlic, soy sauce, olive oil, and black pepper.
Pour the mixture over the chicken, ensuring all pieces are well-coated.
Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken reaches 165°F.
Remove chicken from the pot and set aside on a platter.
Whisk the cornstarch slurry into the remaining liquid in the pot and simmer on high for 2-3 minutes until thickened.
Pour the thickened glaze over the chicken and serve immediately.
