A rich and velvety slow-cooked white chicken chili featuring tender shredded chicken, creamy white beans, and a luscious cream cheese finish.

  • 1.5 lbs chicken breasts
  • 2 cans (15oz) great northern beans, drained
  • 1 can (4oz) diced green chilies
  • 1 cup frozen corn
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tbsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8oz cream cheese, softened
  • Fresh cilantro and lime for garnish

Instructions

  1. Sauté diced onion and garlic in a pan until softened, then add to the crockpot.
  2. Place chicken breasts at the bottom of the crockpot.
  3. Stir in the drained beans, green chilies, and frozen corn.
  4. Whisk cumin, salt, and pepper into the chicken broth and pour it over the chicken and vegetables.
  5. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is cooked through.
  6. Remove chicken breasts, shred with two forks, and return to the pot.
  7. Stir in cubed cream cheese until melted and smooth.
  8. Serve hot with a squeeze of fresh lime and a sprinkle of cilantro.
