  • 8 oz linguine pasta
  • 1 lb fresh clams (preferably littlenecks)
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 2 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • Fresh parsley, chopped (for garnish)
  • Salt (to taste)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While the pasta cooks, rinse the clams under cold water and discard any open or cracked ones.
  3. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  4. Add the cleaned clams and white wine to the skillet. Cover and steam until clams open (5-7 minutes), discarding any unopened clams afterward.
  5. Toss the drained linguine with the clams and reserved pasta water in the skillet over low heat. Stir in butter until melted. Serve garnished with fresh parsley.
