A refreshing and sophisticated autumn salad featuring crisp apples, toasted pecans, and tangy goat cheese, all tossed in a homemade maple vinaigrette.

  • 4 cups mixed salad greens
  • 2 medium Honeycrisp or Granny Smith apples, thinly sliced
  • 1/2 cup pecans, toasted
  • 1/2 cup crumbled goat cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3-5 minutes until fragrant.
  2. Core and thinly slice the apples into matchsticks or crescents.
  3. In a small jar, whisk together olive oil, apple cider vinegar, maple syrup, and Dijon mustard until emulsified.
  4. Place mixed greens in a large bowl and toss with half of the dressing.
  5. Top the greens with sliced apples, toasted pecans, and crumbled goat cheese.
  6. Drizzle the remaining dressing over the top and season with salt and pepper.
