  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs, room temperature
  • 1 cup whole milk, room temperature
  • ½ cup unsalted butter, softened
  • ½ cup raspberry jam
  • Black food coloring (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat together butter and eggs until creamy. Gradually add milk until fully combined.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Fill each cupcake liner about two-thirds full with batter. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. Once cooled, remove a small portion from the center of each cupcake and fill it with raspberry jam. Frost with black icing using a piping bag.
