  • 2 cups diced fresh mango
  • 14 oz can coconut milk
  • 2 tbsp red curry paste
  • 1 inch fresh ginger, grated
  • 3 cloves garlic, minced
  • Fresh cilantro for garnish
  • 1 lime, juiced

Instructions

  1. Place chicken thighs in the bottom of the slow cooker.
  2. Whisk coconut milk, curry paste, ginger, and garlic together; pour over chicken.
  3. Stir in diced mango pieces.
  4. Cover and cook on Low for 6 to 8 hours.
  5. Stir in lime juice and garnish with cilantro before serving.
