  • ¾ cup brown sugar (packed)
  • ¼ cup granulated sugar
  • 1 large egg (room temperature)
  • ½ cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger powder
  • ½ tsp baking soda
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, granulated sugar, and vanilla extract until smooth. Mix in the egg and pumpkin puree until well combined.
  3. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger powder, and salt. Gradually add to the wet mixture on low speed until just combined.
  4. Scoop rounded tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
  5. Bake for 10-12 minutes or until the edges are set but centers remain soft.
  6. Allow cookies to cool on the baking sheets for five minutes before transferring to wire racks.
